The past few months have brought many changes. Life continues with joy, heartbreak, injury, illness, recovery, travel, and yes, politics to distract us. We’ve been away from you a long time but recently posted a recipe on Facebook that we thought you might enjoy.

Eggs in a Cloud
Recipe type: Breakfast
Serves: 6 clouds
This dish has been on the internet for quite some time but always looked difficult, not worth the bother. Well, it isn't difficult at all, and it's definitely worth the few minutes it will take you to prepare. It's pretty and delicious. Y'all ok with that?
Ingredients
- 6 eggs, yolks and whites separated but put the 6 yolks in 6 separate little cups.
- ⅓ cup grated Parmesan
- ⅓ cup chives, chopped fine
- ⅓ cup bacon, crumbled (optional)
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- (Optional: you can serve with toast points to sop up those runny yolks!)
Instructions
- Preheat oven to 450F degrees.
- Whip the egg whites until stiff peaks form.
- Gently add the Parmesan, chives, and crumbled bacon if using.
- Using a spatula, plop a dollop of the egg white mixture onto a cookie sheet lined with parchment paper and make a small indentation in the middle of each.
- Bake for 3 minutes.
- Remove cookie sheet
- Gently add one egg yolk to each indentation of the egg whites.
- Sprinkle with salt and pepper.
- Return to the oven and bake for 3 more minutes.
