Easy Peasy Banana Muffins

Serves: 9 muffins
Ingredients
- 1 very ripe banana, mashed
- 1 egg, slightly beaten
- ½ heaping cup nut butter (Diane uses almond)
- 1 tablespoon vanilla
- 3 tablespoons maple syrup (or honey or agave)
- ½ cup milk chocolate chips
- ¼ teaspoon baking soda
- Pinch of salt
Instructions
- Preheat oven to 400F degrees.
- Line muffin tin with paper liners or use cooking spray to coat the tin.
- Put all ingredients in a blender and mix well.
- Add ½ cup chocolate chips and stir by hand.
- Bake for about 15 minutes or until toothpick inserted in middle comes out clean. Be careful to not overbake or the muffins will be dry.
